- It's 1 cup of sugar.
- It's 1/2 cup of vegetable oil.
- You need 4 of medium eggs.
- It's 2 tsp of vanilla essence.
- It's 2 cups of self raising flour.
- Prepare 1/2 of + 1tbs milk.
- You need 1 tsp of baking powder.
- You need 1 tbs of butter.
Vanilla Cake directions
- Preheat oven to 175`C and spray cooking oil / butter in cake tin. I used 2 cake tins to equal out.
- Melt the butter and mix with 1/2 cup oil. Add sugar and butter/oil mix in a mixing bowl and mix well..
- Once mixed well, add eggs in one at a time and mix. Will look a bit runny but still have a slight thick consistency. Add your 2 tsp vanilla essence and mix well..
- Get a sieve and add your flour and small amount of baking powder. Once sifted mix well to create a thick batter..
- Add in the milk and stir, but do not over mix. Once milk is nicely mixed in leave it..
- Get 2 cake tins and spread the batter equally in both trays and pop in the oven for around 25 mins on 175‘C. Check with a toothpick or skewer if batter has been cooked (if it hasn’t some mixture will go on the toothpick), and cook longer around 165’..
- Once done, get it out and allow to cool and make the icing (optional) i stopped here and just sifted a bit of icing sugar in my cake.
- Enjoy with a lovely cuppa of tea or just enjoy plain! You can choose to top some strawberries if you have some (I ran out :(unfortunately).
